Spiced Halloumi & Hummus Wrap

INGREDIENTS:

  • 1 1⁄2 tsp ground cumin

  • 120g haloumi sliced

  • 1 wholemeal pita bread or pocket, medium (70g) (or gluten free)

  • 2 tbs hummus

  • 3⁄4 cup (30g) baby spinach leaves

  • 1⁄2 Lebanese cucumber cut in matchsticks

  • 1⁄2 carrot (medium) cut in matchsticks

  • 1⁄2 lemon juiced

  • salt & pepper, to taste

METHOD:

  1. Spread cumin on a small plate, add haloumi slices and toss to coat.

  2. Heat a non-stick frypan over medium-high heat, add haloumi and cook for 1-2 minutes, each side, until golden. Remove, then using same pan, add wrap and warm until golden.

  3. To assemble wrap, spread hummus on wrap, layer with spinach leaves, cucumber, carrot and haloumi. Squeeze over lemon juice and season, roll up wrap to serve.
