INGREDIENTS:

  • 1⁄2 cup (50g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)

  • 2 tbs vanilla protein powder (or natural protein powder)

  • 1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)

  • 1⁄4 cup (60g) Greek yoghurt (or dairy-free alternative)

  • 1⁄2 cup (70g) fresh or frozen raspberries

  • 1 tsp maple syrup (honey or rice malt syrup)

  • 1 tsp chia seeds

  • 1 tbs crunchy natural peanut butter (or other nut butter)

  • 1 1⁄2 tbs water hot

METHOD:

  1. Place oats, protein powder, milk and yoghurt in a bowl and stir to combine. Cover and refrigerate for a minimum of 30 minutes (or overnight for a creamy grab-and-go breakfast). You may need to add a little more milk depending on your protein powder.

  2. Place raspberries in a small bowl and mash with a fork. Add maple syrup and chia seeds and stir to combine. Set aside for 5 minutes.

  3. Combine peanut butter and hot water in a small bowl. Drizzle over oats and top with raspberries to serve.
